Hi there, Hope you are ok.
Just incase you don't know your pm box is full.

Not completely healthy, it still uses marg and flour and ofc choc chips! However, I couldn't tell the difference between them and the normal homemade ones.
    Chocolate chip cookies

    Makes: 18 cookies
    Syns per cookie: 3½ Syns

    170g self raising flour
85g low fat spread suitable for baking
    12 tbsp Splenda Granulated
    71g chocolate chips
3 tbsp fat free fromage frais
    1 egg yolk

Preheat the oven to 180C/Gas 4 and line a baking sheet with parchment. Sift the flour into a bowl, add the spread and rub into the flour, using your fingertips, until it resembles breadcrumbs. Sprinkle Splenda over the mix.

Add the chocolate chips, fromage frais and egg yolk, stir then knead to form a soft dough. Divide into 18 portions and roll each one into a ball. Place the dough balls on the baking sheet and using the back of a damp fork, lightly press down to form cookie shapes.

Bake in the oven for 12-15 minutes or until golden. Remove from the oven and place on a wire rack to cool before serving.

I've recently got into cous cous with sweetner and defrosted fruit for brekkie. Sooo healthy and tastes really good... bit like rice pudding for breakfast! :P
Well I'm a slimming world girl atm trying to get myself healthy again, so I completely understand the looking for something sweet but then you know it's full of ****.
This one has a weird texture, not quite cake like... but I still like it. Plus even with the vanilla yoghurt it's really fresh and strong.
Do you like choc chip cookies?

You can make a choc orange version of this too by using an orange yoghurt (currently muller light have an orange with choc bits that might work well!), replace the lemon with an orange and substitute the lemon curd for 2tsp of hot choc.

    Enjoy!!

    Lemon Cous Cous Cake.

    Ingredients:
    4oz couscous
    1tsp baking powder
    2tsp lemon curd
    2 eggs
    2tbsp low calorie granulated sweetener
    1 x lemon, rind & juice
1 lemon yoghurt (Lemon and lime works the exact same, Muller's lemon cheesecake is the best, however vanilla is fine if you don't have lemon in as I often don't!)

    Method:
Stick the kettle on (Not just for tea)
Pour your cous cous into a bowl and pour over 8fl oz of the freshly boiled water. Leave the cous couse to soak for 10 mins.
Whisk the eggs until a lovely pale yellow and slightly fluffy.
Once the cous cous is ready pour EVERYTHING else into the bowl too and give it a good old mix. It might look a bit too runny, but don't worry it will cook!
Stick in in the microwave for 10 mins on high.
Once it's dinged you can eat it warm, but I think it's best cold.

Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways, chocolate in one hand, wine in the other, body thoroughly used up, totally worn out and screaming 'WOO HOO, what a ride!
